Pairing Paso Robles Rosé with Food

Rosé is ideal for seasonal spring and summer enjoying, but that isn’t the only time to sip this zippy drink.

A Paso Robles rosé presents summery aromas of lime and peach with a burst of tropical guava. A clean, crisp texture enlivens the palate with flavors of watermelon, pineapple and pink grapefruit. Zippy acidity lands perfectly on a luscious, refreshing finish.

Aside from your typical pairings of fresh seafood, light pasta dishes, and goat cheese, this wine also pairs well with Tacos Al Pastor. See below for the recipe, try it out, and let us know what you think!

Tacos Al Pastor Recipe —

generously donated by Rosalinas in Santa Margarita, CA

Serves 4 people, makes 8 tacos

INGREDIENTS

3 tbsp of achiote powder
1 chipotle pepper from can of chipotle chiles in adobo sauce
1 tsp vegetable oil
2.5 oz Coca Cola
Juice of 1 orange
1lb pork shoulder, sliced into 1/4 inch slices

1 small pineapple, peeled, cored, and cut into quarters lengthwise.
1 sweet onion
1/2 cup finely minced cilantro
2 limes, cut into 8 wedges each
8 Corn tortillas

INSTRUCTIONS

  1. BLEND THE MARINADE: In a blender, put the servings of achiote powder, chipotle chile in adobo, juice of one orange, and Coca Cola. Blend together. Place 1 LB of sliced pork shoulder in the marinade for at least two hours, or overnight.

  2. GRILL: Heat a charcoal or gas grill. When hot, grill slices of marinated pork shoulder on both sides until cooked thoroughly (~4-6 minutes each side). Give it a quick taste for seasoning.

  3. TOPPINGS: Brush the sliced pineapple and sweet onions with the same marinade. Grill until charred, (~4 minutes).

  4. PLATE: Warm the tortillas on the grill. Chop pork, onion and pineapple to fit into corn tortilla shell. Dress with chopped cilantro and sweet onion, and serve with alongside your favorite salsa.

  5. POUR a glass of rosé & enjoy!
